For this month’s Movies & Munchies feature, Amy is hosting It’s the Great Pumpkin, Charlie Brown!
There are lots of Halloween inspiration at Amy’s Cooking Adventures so check them out.
I grew up with the Charlie Brown cartoons. I just can’t get in the spirit without watching A Charlie Brown Christmas. While it had been a while since I had watched The Great Pumpkin, I think I know most of the dialogue by heart.
I swear my best friend had that same exact witch mask. And, I think her brother had a similar Frankenstein mask.
Of course, my food tie-in would be pumpkin-something.
I thought about just revisiting some old recipes like my Pumpkintini or Pumpkin Granola. As I was defrosting some roasted pumpkin from the freezer and still deciding what to make, I remembered some great quick breads that my MiL makes over the holidays. One of these is her pumpkin bread.
Pumpkin Bread
This smells delicious while baking. It’s a moist, cake-like bread.
Ingredients
- 1 1/ 2 c. sugar
- 2 eggs
- 1/2 c. pumpkin
- 1/2 c. coconut oil
- 1 c. flour
- 1/2 c. whole wheat flour
- 1 t. baking soda
- 1/2 t. nutmeg
- 1/2 t. cinnamon
- 1/8 t. ginger
- 1 t. salt
- 1/2 c. water
Instructions
- Preheat oven to 350 F.
- Mix together sugar, eggs, pumpkin and oil.
- In a separate bowl, whisk together the flour, soda, nutmeg, cinnamon, and slat.
- Add flour mixture to pumpkin mixture, alternating with the water. End with.
- Pour into a prepared loaf pan. Bake in preheated oven for about 25 minutes.
Yield: 1 loaf
The original recipe calls for vegetable oil. I substituted coconut oil. I also added a bit of ginger and whole wheat flour. (Sorry, I just can’t keep well enough alone.) You might also notice that my bread is not really pumpkin colored. I used some frozen white pumpkin that I roasted last winter.
Thanks for hosting this month, Amy. Please check out our Facebook group, Movies & Munchies, and think about joining. For November, Wendy is hosting Jim Henson’s Turkey Hollow. That should be another fun time!
As I perused through my pumpkin archives, I realized just how many pumpkin options I have posted over the years. If you’re interested, please check them out here.
